Preheat the oven to 425 degrees F. (220 C)
Peel and cube the sweet potatoes into 1/2 inch pieces and add to a large bowl
add the salt, pepper, paprika, oregano, olive oil, and mayonnaise to the bowl and toss until the sweet potatoes are coated.
spread out to arrange in an even layer on your largest sheet pan. You don't want any potatoes overlapping.
Bake for around 30-35 minutes (you can flip the sweet potatoes halfway through cooking to get them crispier)
